Actually Good Low Carb Pancakes!

These low carb pancakes are actually good! Seriously!
  • 4 large eggs, separated
  • 2 tbsp water
  • 4 oz cream cheese
  • 1⅓ cups almond flour
  • 2 tsp baking powder
  • 4 tsp vanilla extract
  • 1 tsp Stevia
  1. Place egg whites in your electric mixer and beat until stiff peaks form
  2. While this is happening, I like to start with the rest of the batter since it goes fast in a blender. Place water, egg yolks, and cream cheese in the blender and blend until smooth. You may have to scrape down the sides a few times.
  3. Once you've got a smooth mixture, add the almond flour, baking powder, vanilla, and sugar substitute. Blend again fully mixed. The mixture will be a bit thick.
  4. Pour the almond flour mixture into a large mixing bowl.
  5. Mix ¼ of the beaten egg whites into the almond flour mixture and mix thoroughly. This will help loosen up the batter for the next part, while adding a little bit of volume.
  6. Fold remaining beaten egg whites into the batter ⅓ at a time.
  7. Once completed combined cook as you would any other pancakes. And feel free to add any low carb ingredients to this you like - lemon zest, cinnamon, berries, bacon, cheddar.
  8. Enjoy!
